Unimumma’s Exam-Time Meals: Spatchcock Chicken Traybake


  • 1 medium chicken
  • 2 red peppers
  • 1 red onion
  • ½ butternut squash
  • 2 courgettes
  • 1 aubergine
  • 3 garlic cloves (chopped)
  • 4 tsp smoked paprika
  • 2 tsp paprika
  • 2 tsp tumeric
  • 2 tsp dried oregano
  • 500g Quinoa mix
  • 1 tbsp chopped fresh mint
  • 1 lemon
  • 3 tbsp 0% fat yogurt
  • 1 tbsp olive oil
  • 1 veg stock cube


  1. Spatchcock the chicken (you can look this up on Youtube). Score the skin of the chicken for the dry rub.
  2. Chop all the veg the same size so they cook for the same time.
  3. Mix the herbs and garlic together with oil and rub into skin of the chicken, and around the veg.
  4. Roast the chicken for 40 mins (spatchcocking the chicken cuts the cooking time down so it matches the veg).
  5. Meanwhile, cook the quinoa in veg stock, and mix the mint, lemon and yogurt together.
  6. Combine the juicy chicken, roasted veg and quinoa together and top with the yogurt dressing before eating!

This is such a crowd pleaser as well so if you’re having people round for a BBQ, you can still spatchcock the chicken and use the rub, but put your veg on skewers for veggie kebabs!
