Makes 1-2 servings (but can be easily double although you may want to make fresh that morning or night before so ingredients don’t go soggy in the fridge)
Ingredients
- 1 raw beetroot
- 1 tsp wholegrain mustard
- Ham trimmings (do not be put off by buying ham trimmings, they are significantly cheaper, and are lot more satisfying that wafer slices)
- 6 cherry tomatoes
- 1 roasted red pepper (from a jar, a great cupboard filler to add to many meals)
- 1 dollop of low fat hummus
- 1 handful mixed lettuce
- 50g quinoa mix
Method
- Grate the beetroot and mix with the mustard
- Cook the quinoa (in veg stock if you have any)
- Assemble all the ingredients together
I know this one may seem rather boring, but this is a good lunchbox idea, and you can mix up the ingredients. For example, the next day, I had most of those ingredients, but no quinoa, and leftover broccoli. So I traded quinoa for broccoli, and sprinkled some cumin on top, and a squeeze of lemon, and you suddenly have a Moroccan inspired lunch box!
