Unimumma’s Week 3 Recipes: Salmon Stir Fry

(1 Serving)

Unimumma week 3 salmon stock

Ingredients

  • 3 Tbsp Soy Sauce
  • 2 Tsp Lazy Garlic
  • 2 Tsp Lazy Chili
  • 2 Tsp Ginger Paste
  • 1 Frozen Spinach cluster
  • Handful of broccoli
  • ½ Yellow Pepper
  • ½ Onion
  • ½ Lime Juice

Method

  1. In a sandwich bag add in half the soy sauce, half the garlic, chili and ginger, and the salmon fillet. This can be over night, all day or just an hour.
  2. Fry off the rest of the spices, add in the veg, and cook for 5 mins, before adding in the salmon on the side of the pan whilst the other veg cook.
  3. Once the salmon is cooked (7-8 minutes), tip in the marinade, and flake up the salmon with the veg and squeeze the lime over before serving.
