After a few days of snow, where the trek to the shops seems too treacherous, this week’s three main recipes are rooted in the concept of using up your main cupboard ingredients. For me, these usually include Very Lazy chopped garlic, chilli, and ginger paste. These staple ingredients give any bland meal a far more exciting taste. I also would recommend having a good collection of spices at your disposal! Aldi do excellent spices for only 70p each. Last tip, having frozen fish and meat is always good for busy days or weeks where you haven’t had the opportunity to do your shop.
This weeks main recipe ideas:
- Sausage Meatball Spaghetti
- Chicken Laksa
- Banana and Oat Pancakes
Sunday
Brunch – Poached egg, toast and bacon and toast
Dinner – Roast Chicken and Roasted Veg (parsnip, carrots, onion)
Monday
Breakfast – Banana and Oat Pancakes
Lunch – Leftover chicken sandwich
Dinner – Chicken Laksa (using up leftover roast chicken)
Tuesday
Breakfast – Egg and Soldiers (sweet potato sticks make a good, gluten-free alternative)
Lunch – Chicken Laksa, with some extra hot water to make a great Laksa-soup.
Dinner – Sausage Meatball Spaghetti
Wednesday
Breakfast – Banana and Oat Pancakes (you can store the batter so you don’t have to make it from scratch)
Serve with crispy bacon, or berries to make a brunch
Dinner – Sausages, mash (using leftover roasted veg), peas and gravy
Thursday
Breakfast – Smoothie of your choice
Lunch – Cajun Salmon and Lentil Salad Bowl (cook both salmon fillets for tomorrow’s lunch)
Dinner – Sausage Gnocchi
Friday
Breakfast – Sweet potato toast, spinach and a fried egg
Lunch – Salmon and Lettuce Wrap
Dinner – Friday fake-away of Veg curry and rice. Using whatever veg you have left in your fridge in the end of the week, cook them off with garam masala, add in tinned tomatoes, some veg stock, and yogurt. If you are going all out, add the yogurt you are using with flour till you get a dough-like consistency, and grill in a dry skillet to make some easy homemade naan breads.
Saturday
Brunch – scrambled eggs, mushrooms and spinach
Dinner – Jacket sweet potato, grilled chicken breast, ratatouille
