This two ingredient flatbread is so easy to make and really cheap too (around 17p a flatbread!) so it’s the perfect alternative to shop-bought bread. In this recipe I make the flat breads and then add toppings and cook in the oven to make mini pizzas, but you could use them to accompany casserole dishes, curries or add some avocado and scrambled eggs to make a healthy breakfast dish.
The flatbread itself is from a Sam Stern recipe and is slightly adapted.
The ingredients for eight flatbread’s are:
275g plain flour (0.45p for 1.5kg bag at Tesco)
225ml of natural (or Greek) yoghurt (500ml for 90p at Tesco)
You can also add a tiny bit of salt and pepper if you like.
To make the flatbread sift the flour into a bowl and mix with the yoghurt and any seasoning (add paprika for spicy flatbread or dried rosemary for an alternate flatbread). Mix together with your hands to form into a dough-like ball and then put onto a clean floured surface. Divide the dough into eight equal sized balls and roll each portion into a thin circle ready for cooking.
Use a tiny amount of olive oil or a spray oil to coat the pan and dry fry the flatbreads one at a time until they expand and look a bit chargrilled like naan bread, probably after a few minutes on each side. (see photo below)

If you want to make them very crispy you can also place them under the grill for a few minutes but this is definitely not necessary.
To make the pizzas:
After cooking the flatbreads, spread a thin layer of passata or tomato puree over the top and add some cheese (mozzarella is my favourite, but grated cheddar will work fine too!) and any other toppings you’d like. Try not to add too many because the flatbread might collapse or burn while the toppings are underdone. Place on a baking tray and cook for about 5-10 minutes at 180 degrees until the cheese has melted and any other toppings have cooked.
